Cheesy Beer Soup



Cheesy Beer Soup

This is real guy soup! I love it -- Cheese and Beer!

1 medium white onion, finely chopped
1 clove garlic, minced
1 tablespoon butter
1 tablespoon flour
1-3/4 cups milk
1/2 pound Velveeta cheese product, cut into 1/2 inch cubes
1/2 cup beer
1/2 teaspoon Worcestershire sauce
Few drops hot pepper sauce

Garnish: Garlic croutons, minced green onion, crumbled cooked bacon, plain pop corn

Cook onion and garlic in butter in large saucepan on medium-high heat until tender, stirring frequently. Add flour; mix well. Cook 3 minutes or until hot and bubbly, stirring constantly – DO NOT brown.

Stir in milk until well blended. Cook until mixture comes to a boil and thickens, stirring constantly. Reduce heat to low; simmer 5 minutes, stirring occasionally.

Add Velveeta, beer, Worcestershire sauce and hot pepper sauce; mix well. Cook 5 minutes or until Velveeta is completely melted and soup is heated through, stirring constantly.


Serve in warm bowls and garnish as desired.
